High West's new Cask Collection builds on what they've learned from doing finished single barrels for years. It features small barrel blends finished in unique casks - the first release includes this blend of bourbons aged 4-9 years and finished in Barbados Rum barrels for 10 months. The blending allows for more complete whiskey profile at the end of the day and these releases are exceptional.
Expect a nose of coconut, banana walnut bread, vanilla custard, undertones of deep molasses, sun-warmed hay, and cherry wood humidor. The palate offers peach Danish, brown butter coconut caramel, marshmallow fluff, kettle corn, deeply caramelized candied ginger, rooibos tea. Velvety on the finish it shows ripe peach, dark brown sugar cubes, and high end cigar paper.
