High West's new Cask Collection builds on what they've learned from doing finished single barrels for years. It features small barrel blends finished in unique casks - the first release includes this blend of bourbons aged 4-9 years and finished in Chardonnay barrels for 11 months. The blending allows for more complete whiskey profile at the end of the day and these releases are exceptional. The nose is complex showing guava, honeydew melon, dried apricot dipped in white chocolate, wildflower honey, licorice twist, stroopwafels, and the vibe of a late summer day. The tasting notes include passion fruit, mango smoothie, pasture-raised melons, membrillo, honey syrup, pastry dough, and mead. The finish is a blend of Turkish delight, peaches flambe, and toasted oak.
