Fermentation relies on the same natural yeast used for over 80 years, avoiding synthetic alternatives to maintain authentic aromas and taste. The process utilizes deep earth well water for a distinct viscosity and custom stone ovens that evenly cook the agave. A converted 19,000-pound mechanical tahona gently crushes the agave, preventing bitterness, while custom copper stills, meticulously cleaned before each batch, ensure a pure and refined tequila.
